Amazing Icing
Why pay more for cupcakes? Make them at home for a perfect treat!
Ingredients
1/4 cup Butter
2 1/2 cups sifted icing sugar
3 to 4 Tbsp milk

1. Cream butter, gradually add sifted icing sugar and milk alternately, to make of spreading consistency.
2. Add more icing sugar or milk if necessary.
3.blend together until thick and forms peaks

Tip: Make sure the butter is soft before whipping.
Tip: Use food colour and the extract of your choice to colour/flavour

Easy Enchiladas

Ingredients
1 can cream of chicken soup
1/2 cup sour cream
2 cups cooked chopped chicken
1 cup salsa
1tsp Chili powder
1/2 cup monterey jack cheese, shredded
6 flour tortillas
can of black beans
chopped tomato
chopped green onion

1. Combine soup, sour cream, picante sauce and chili powder in medium bowl.
2. Combine 1 cup (250 mL) picante sauce mixture, chicken, cheese and beans in large bowl.
3. Divide chicken mixture among tortillas. Roll up tortillas and place them seam side up in shallow baking dish. Pour remaining sauce mixture over filled tortillas. Cover baking dish.
4. Bake at 350°F (180°C) until enchiladas are hot and bubbling – about 40 minutes. Top with tomato and onion.

7 Layer Fiesta Dip

2 (8-ounce) packages low-fat cream cheese, softened
2 tablespoons taco seasoning mix (your favorite brand)
2 cups prepared guacamole (make your own or use ready-made)
2 cups tomato-based salsa
2 cups finely shredded iceberg lettuce
2 cups shredded cheddar cheese
1 cup chopped green onions
2 (2-ounce) cans sliced black olives

1. In a small bowl, mix together cream cheese and seasoning mix. Spread mixture evenly onto the bottom of a 13 x 9 x 2-inch glass dish.

2. Top the seasoned cream cheese with the guacamole, salsa, lettuce, cheese, onions and olives in layers.

3. Serve immediately accompanied with tortilla or corn chips. Refrigerate any remaining dip.
